Inspiration:
A beautiful place on earth called Sri Lanka.
Ingredients
* Red Lentils (1 cup)
* 1 small Red Onion, chopped fine (actually, I prefer shallots better)
* 1/2 Teaspoon Saffron (Tumeric)
* Garlic - 1 pod (chopped and smashed)
* 3 Red dried chillies
* Mustard Seeds, 1 tsp
* Curry Leaves, 1 sprig - optional
* 1/2 Cup almond milk
Method
* Start the Lentil Cooking Process
(Important: See my instructions on how to cook Lentils)
* 1/2 TBSP of Turmeric is a good way to cut the amount of gas from lentils, but the final product tends to smell a little like ham. I am not sure why that happens. So adding ginger to the Lentils is a better idea. But it will not hurt if you cut the amount of turmeric in half and add that in along with ginger
* This step can be undertaken in the same pot (just to save on time taken to wash dirty pots!) Add the almond milk and salt to taste. Add hot water for desired consistency of the Dhal. Turn off heat and set aside.
* Heat Olive oil (Grapeseed oil has a nicer flavor than Olive Oil and is healthy too) in frypan, throw in mustard seeds and dried red chillies first. When the mustard seeds start spluttering throw in curry leaves, red onion, garlic and sprinkle some water over them. Now "fry" them on medium heat. My opinion is that this "frying" process is less unhealthy. The onions need to turn into a golden color.
* Add this mix into the lentil curry, bring to boil.
[Serve with red/brown rice/Quinoa (watc out for quinoa updates on my blog!) and freshly Chopped Salad (My salad has chopped Romaine Lettuce, a couple Red and Juicy Tomatoes, Chives and some Avocado)
