Cornish hens are small but pack a lot of taste in them. We normally become savage like and dig right in with our hands to get every last piece of meat. This experience makes you feel like a kid.
This recipe has changed each time we have made it and I think we have finally perfected a spicy cornish hen.

Ingredients
marinade
24 oz roasted red peppers, drained
4 tbsp raspberry jelly (we used a jalapeno raspberry jelly)
2 tbsp olive oil
2 tbsp Dijon mustard
2 tbsp balsamic vinegar
1 tbsp dried rosemary
1 tbsp paprika
1 jalapeno
1 tbsp salt
2 cornish hens
Stew mixture
2 lemons sliced
2 sweet potatoes chopped
1 red onion chopped
1 cup chicken broth
Directions
1. In a food processor add all marinade ingredients and blend.
2. Add marinade and hens to zip lock bag. Store in refrigerator overnight.
3. Add to casserole dish hens and marinade. Stuff cavity of hen with lemons.
4. Add the stew mixture to cover hens.
5. Preheat oven to 400 F and cook for 45 minutes.
