Ingredients
3 tbsp olive oil
1 medium onion, chopped
1 lb sliced fresh okra
1/2 tsp ground cumin
1 tbsp ginger, grated
1 tsp ground coriander
1 tsp ground black pepper
1/4 tsp chili powder
1/2 tsp garam masala
2 tbsp turmeric
salt to taste
Directions
1. Heat oil in olive oil over medium-high heat.
2. Add onion, garlic, and ginger. Cook until golden brown.
3. Add cumin, coriander, garam masala, chili powder, and tumeric. Cook for 2 minutes
4. Add okra, reduce heat to medium-low, and cover the pan. Cook for 20 minutes stirring occasionally until okra is tender
