Galumpkis (Stuffed Cabbage Rolls)

I've previously made Galumpkis and loved them. Galumpkis are a polish dish consisting of cabbage rolls stuffed with ground pork or beef, chopped onions and rice. Since Ilango's diet is restricted to only chicken, turkey, or fish I had to adapt the recipe to contain ground turkey. They were a hit!!



Ingredients
Sweet and sour tomato Sauce:
2 tbsp extra-virgin olive oil
2 garlic cloves
1 onion
5 cups crushed tomatoes
4 tbsp red wine vinegar
3 tbsp sugar
salt and freshly ground black pepper to taste
1 tbsp red pepper flakes


Cabbage Rolls
1/4 cup extra-virgin olive oil
2 yellow onion, chopped
2 garlic cloves, minced
1 small tomato paste can
1.5 pounds ground turkey
2 large egg
1 1/2 cups steamed white rice
salt and freshly ground black pepper
1 purple or green cabbage head

Directions

Sweet and Sour Tomato Sauce:
1. In a sauce pan add oil, garlic, and onion. Cook for 5 minutes on medium heat.
2. Add the crushed tomatoes and cook for 5 minutes.
3. Add the rest of the ingredients and cook for 5 more minutes.

Meat mixture:
1. In a skillet add oil, garlic, and onion. Cook for 5 minutes on medium heat.
2. Stir in the tomato paste, herbs, and 1/2 cup of the prepared sweet and sour tomato sauce, mix to incorporate and then take it off the heat.
3. In a mixing bowl add ground turkey, egg, cooked rice, and the mixture from the above step.
4. Get your hands dirty and combine the filling together with a generous amount of salt and pepper.

Cabbage:
1. Remove damaged outer leaves and cut the core out of the cabbages.
2. In a large pot add salted water and cabbage.
3. Outer leaves will become tender and will be easily removable. Separate all the leaves carefully. Cool them under cold water. Preheat oven to 350 degrees F.
4. Put a layer of broken cabbage on the bottom of a casserole pan.
5. Use the good looking cabbage leaves to make cabbage rolls.
6. Put a 1/2 cup of meat filling in the center of the cabbage.
7. Starting at the stem-end, fold the sides in and roll up the cabbage to enclose the filling.
8. Place rolls side by side on top of broken cabbage in casserole pan with seam down.
9. Pour the remaining sweet and sour tomato sauce over the cabbage rolls.
10. Make a layer of cabbage on top of the rolls.
11. Bake for one hour
