Ingredients
1 cup all purpose flour
1 cup whole wheat flour
1/2 cup sugar
2 tsp baking soda
1 tbsp cinnamon
1/2 tsp salt
2 cups peeled and shredded apples (3 medium)
1/2 cup shredded carrots
1/2 cup chopped walnuts
1/2 cup brewed coffee (this is an oil substitute for 1/2 cup vegetable oil)
1/4 cup skim milk
2 tsp vanilla extract
2 large eggs
Directions
1. Heat oven to 350 F and line muffin tray with muffin cups.
2. Combine flours, sugar, baking soda, cinnamon, and salt in a large bowl.
3. Add apples, carrots, and walnuts to flours (2) and mix well.
4. Add coffee, milk, vanilla, and eggs. Stir until moistened.
5. Fill muffin cups until top. (Makes 12 muffins)
6. Bake for 20 to 25 minutes or until toothpick comes out clean.
