Oven Roasted Rosemary and Garlic Chicken



Ingredients
1 whole chicken

Marinade
1/2 medium red onion minced
4 cloves of garlic minced
1/4 cup olive oil
1 tbsp lemon juice
2 tbsp rosemary
2 tbsp balsamic vinegar
salt and pepper

Veggies
1 large red potato chopped
1 Zucchini sliced
1/2 red onion sliced
2 tbsp olive oil
1 tbsp balsamic vinegar
Lipton soup herb mix

Directions
1. Preheat oven to 400 F. Combine all marinade ingredients in a small bowl.
2. Stuff marinade under skin of chicken and transfer chicken to baking pan.
3. In a small bowl mix olive oil, balsamic vinegar, and lipton soup mix. Then coat veggies with the mixture. Surround chicken with veggies.
4. Cover with aluminum foil and bake for 1 hour or until chicken is fully cooked.
